- 250 grs carne picada de ternera
- 1 lata tomate triturado
- 2 zanahorias
- 1 cebolla grande
- aceite de oliva

- Empezamos poniendo en marcha el horno a 180º arriba y abajo y sin ventilador.
- Mientras se calienta el horno, lavamos las berenjenas, las partimos por la 1/2 a lo largo, les hacemos unos cortes en la pulpa y las colocamos en una fuente resistente al calor.


- Ponemos las berenjenas en el horno hasta que estén cocidas.

- Mientras se hornean, preparamos una salsa boloñesa clásica con la cebolla, la zanahoria, la carne picada y el tomate. Yo sigo la receta de Thermomix pero sirve la que más os guste.



- Una vez cocidas las berenjenas, dejamos que se enfríen un poco para poder manipularlas sin quemarnos. Sacamos su pulpa, con cuidado de que no se nos rompan.


- Mezclamos la pulpa con la boloñesa y le añadimos 2 cucharadas de queso ricotta o similar.
Lo picamos todo un poquito en el robot de cocina para que quede bien mezclado pero sin pasarnos ya que no queremos un puré.
- Rellenamos las berenjenas con la mezcla obtenida, cubrimos con queso rallado, gratinamos hasta que se dore y a comer!! Buen provecho!!
