  10. 200 gr. garbanzos (podéis poner de bote, ya cocidos)

  12. 1 cda tomate frito
  13. harina (para rebozar el cordero)
  14. 500 gr. sémola para cous-cous
  15. 500 gr. agua
  16. 50 gr. mantequilla
  17. Especias: Ras al hanout, harissa, pimienta, sal, curry, cúrcuma

Instructions to make to make Cous cous

  1. En un bol, mezclamos la harina con la especia ras al hanout.
  2. En una cazuela de barro o sarten, calentamos el aceite.
  3. Cogemos los trozos de carne y los rebozamos bien por la mezcla anterior y los sofreímos.
  4. Mientras se sofríe bien la carne, pondremos una olla con los garbanzos, para que se vayan cociendo.
  5. A esa olla, vamos incluyendo las verduras. La col, la ataremos con un cordel, para que no se deshagan las hojas. Añadimos media cucharada de cúrcuma.
  6. A medida que vayamos sofriendo la carne, también la vamos añadiendo a la olla.
  7. Comprobamos el punto de sal y de ras al hanout, para que el caldo no sea muy picante.
  8. En el aceite que nos ha quedado de sofreir la carne, ponemos la cebolla y la pochamos bien, junto con el tomate.
  9. Añadimos este sofrito a la olla y dejamos cocer durante una hora. Durante este tiempo, si vemos que la verdura se ha cocido, la vamos sacando de la olla para que no se deshaga.
  10. A la vez que va cociendo la carne, vamos preparando la sémola. Para ello, ponemos a cocer el agua en un cazo, con un poco de sal.
  11. Cuando esté hirviendo, vamos añadiendo la sémola, poco a poco, y moviéndola para que no se apelmace.
  12. La dejamos reposar, durante 6 minutos y la removemos de vez en cuando.
  13. Pasado el tiempo, añadimos la mantequilla y la vamos removiendo durante 2 ó 3 minutos.
  14. ¡Ojo! Mirar las instrucciones del paquete, porque no suelen variar mucho los tiempos de una marca a otra.
  15. Una vez que está todo cocido, sacamos la verdura y la carne en una bandeja.
  16. Yo preparé dos salsas. Una la hice con el caldo del couscous y la puse una cucharadita de harissa (es una mezcla de especies marroquíes muy picante) y la de cebolla.
