- Ponemos una sartén grande al fuego con abundante aceite de oliva.
- Mientras tanto, en un plato o bol batimos 1 o 2 huevos, en otro plato ponemos harina y entonces cogeremos las rodajas de berenjena y las pasaremos primero por harina muy ligeramente quitando todo el sobrante de harina y después las pasamos por huevo (puedes hacerlo también evitando la harina y pasándolas solo por huevo.

- Las iremos echando en la sartén y cocinándolas a fuego medio/bajo por ambos lados, dándoles la vuelta de vez en cuando hasta que estén doraditas, entonces las sacaremos y las iremos colocando en una fuente con papel absorbente para quitar todo el exceso de aceite.
- Ya podemos servirlas y podremos consumirlas calientes, frías o del tiempo.
