  1. Le cortamos el "rabito" y las partimos por la mitad

  7. Una vez que el sofrito está bien hecho, tenemos 2 opciones, lo dejamos enfriar y una vez que esté frío, añadimos los huevos batidos y un poco de pan rallado o mientras esté en la sartén caliente, echamos el pan rallado y los huevos batidos y movemos rápido porque si no se nos cuece.
  8. Retiramos el sofrito y lo dejamos enfriar unos minutos, mientras precalentamos el horno a unos 200 grados y preparamos las berenjenas en una bandeja con papel de horno.
  9. Rellenamos las berenjenas con el sofrito y espolvoreamos un poco de pan rallado.
  10. Ponemos queso rallado por encima al gusto, en nuestro caso nos gusta mucho el queso gratinado y ponemos bastante.
  11. Metemos las berenjenas en el horno, aprox unos 30 min, ir mirando que no se os pase. Y mientras se hacen, recoger y limpiar la cocina... que luego da mucha pereza 😉
