La caponata es un guiso siciliano de berenjena de sabor muy intenso. Puede tomarse fría o caliente. Se suele servir como entrante o acompañando a otros platos.
La receta lleva apio pero a mí no me gusta mucho por lo que lo he cambiado por puerro(y pido perdón). Ya sé que no es lo mismo, pero así también está de lujo.....

  3. 14-15 aceitunas negras sin hueso
  4. 2 cucharaditas alcaparras
  5. 1/2 cebolla

  8. 2 cucharadas vinagre de Módena
  9. 1 cucharadita azúcar blanco
  10. Sal
  11. aove

  1. Lavar y picar la berenjena en cuadraditos, poner en un bol con agua fría y sal unos 20-30 minutos
  2. Mientras, picar la cebolla en juliana fina y poner en una sartén con AOVE a fuego bajo
  3. Picar las aceitunas por la mitad y cuando la cebolla esté blanda añadir a la sartén junto con las alcaparras y los piñones
  4. Dejar a fuego bajo unos 10 minutos. Lavar y picar el tomate y añadir a la sartén, dejar a fuego bajo otros 10 minutos.
  5. Poner a escurrir la berenjena, picar muy fino el puerro y en otra sartén poner el puerro 2-3 minutos
  6. Añadir a la sartén con los demás ingredientes. Y en la misma sartén donde hemos hecho el puerro añadimos un poco más de AOVE y hacemos la berenjena
  7. Cuando la berenjena esté hecha la pasamos a la sartén con los demás ingredientes y dejamos todo junto 2-3 minutos
  8. Añadimos entonces sal, el azúcar y el vinagre. Dejamos otros 2-3 minutos y ya la tenemos lista
